Def a more even cook throughout. I did a hour and 20 min in the water, and then about 2 min per side in the cast iron. But yeah!.. I may do that more often!

I like the idea of it bringing the meat up to temp then the Skillet just to put a crust on it without being too tough

The method does work pretty good!.. I held it at 130 degrees. Oddly enough, I didn't have to do any adjustments, it settled right at 130 with the gas stove on low in a pretty good sized pot.

Dude, I spent 2 years on our Compound HQ FB page... I like to thank everyone that had bought from us and edit thier logo in the pic.. about the 3rd one I did that day, the screen went red, and they just said "Your page has been unpublished"... 2 years of work down the shitter. They look for bans in certain groups too. I'll even post stuff with spaces inbetween D O S I WH HO A!... and thier algorytyims still pick it up and ban me for 7 to 30 days.
