Just wanted to say thanks for the links to coolerguys. I was just gonna hook up my fans to a MW driver an ran them at full power. But instead I decided it would be nice to control the fan speed as needed so I ordered a very basic setup for 6 fans. Altogether it cost a little over $50 but it gives me a plug and play (with a couple mods) speed controller for my fans.

found a nice led controller with 9 Pwm channels; wifi. temp-sensors; fan controller

seems to be a closed system, but it gets me some ideas for a user interface and things like that.

and here is a nice arduino board for this, all on board /RTC, enough Pwm outputs and sensor inputs. only wifi is missing
