Tonight was my first night since mom died that I hosted a dinner party (me and several friends take turns with serving a multiple course meal at our homes).

I started with a Tabouli appetizer on wheat crackers or cowboy caviar on homemade blue corn tortilla chips (depending on your taste). Then I served a cold Thai sweet salad with chilled noodles followed with a beef Phở. I also had vegetarian spring rolls with a hoisin, oyster sauce, soy sauce, ginger, garlic, chili flakes, brown sugar, rice wine dipping sauce. Dessert was Kao Niaw Ma-Muang (Sweet Sticky Rice with Ripe Mango and Coconut Cream). The beverage was a coconut rum sangria.

Tonight is Fajitas with pico de gallo and guacamole. Hopefully I'll have some pics up and a recipe for you in about an hour or so. :p

The menu this evening is Pan fried pork chops dredged in spiced flour.
Mashed taters & home made gravy.
Dessert will be fresh whole corn roasted w/ garlic & lots of Canna butter.
Oh, and Dove bars to cleanse the palate.

Carne - do me a favor & say that in Spanish so it sounds exotic. :-P

i cooked a lovely dried bean soup...came in a package with some seasonings already added...boiled over my coleman burner outside my tent and i added seasonings, hot sauce and a chopped red pepper

Here are some photos of tonight's dinner. My dinner guests (free loading family members) were licking the plates. I have to say, it was delicious.

The building blocks of a fine meal:



I started marinating the meat last night in lime juice, orange juice, minced garlic, cilantro, diced seeded jalapeños and a bit of salt.



I started first on the pico de gallo and guacamole so I could chill them.

Make sure you dice the onions small for the pico de gallo:



Remove seeds and pulp when dicing the tomatoes. I cut mine exactly the same size as the onions:



I don't fuck around with Jalapeños. Call me a pussy or whatever. I use gloves. I have had too many bad experiences with peppers. And it usually involves my nether yeya.



Don't forget the limes. I prefer key limes. They add an extra punch to the recipe. Although you need a lot more of the little fuckers.



I mixed the ingredients in a bowl, covered it with foil and set it in the fridge to chill and allow time for the ingredients to blend.



Here's the guacamole. There is no pretty way to show the making of guacamole. No matter how you do it the process looks like baby shit being mixed in with chunky vomit. I thought I would spare you all that. Sorry for the visual.



I put that in the fridge and covered it with foil. Not for any particular reason other than I didn't want to look at it any more. ::shudder::

Next I started on the vegetables for the fajitas:



Once that was done I grilled the meat. Took out the meat. Grilled the vegetables. Reintroduced the meat and then poured in the marinade.



Trust me. It smelled as good as it looks.

Then I made tortilla bowls to hold the concoction and the condiments:









And finally the finished product:



I think I ate too much.

Damn Carne, that looks delicious. Totally made me hungry. I guess I'm gonna have to settle for a peanut butter and jelly sandwich since my cupboards are currently barren.

well since im working its not really what i made for my self but tonights menu included

Chicken enchilidas verdes
carne asada
refried beans
tamales
spanish rice
chicken tortilla soup
mexicali corn
jalapeno cornbread
and all the trimmings!!!! was a busy night.

That really really tempts me :) The family have been nagging me to make them some of my tortilla wraps, which i'll admit are tasty, but not a patch on that food. I'd have just sat there eating the meat outta the pan and none would have made it to the table. Tasty tasty. Damn you!

Lolololol my cooking is pretty basic... I can do Indian food like curry and roti, Russian pelmeni, sushi and onigiri but my real thing is baking.

Tip Top is the expert in the kitchen <3

Tonight is Bacon cheeseburgers with freshly roasted Hatch green chili. It's time for chili roasting and ristra building. We have 7 large Gunny sacks full of peppers ready for roasting and drying. The whole family is getting together to roast and build ristras to hang outside. We roast the chili pods and then layer them between wet towels and they slowly steam which loosens the skin and makes it easier to peel.

I've been soaking some mesquite chips in water and am firing up the charcoal grill. Once the coals are cherry red I add the wet chips. Then I will roast the chilis for the burgers and then cook the bacon and meat. The smoke from the mesquite chips add a nice flavor to the meal.
