will putting my plants into preflower and back to veg so i can get rid of any males stress them enough to make hermies?

Or just keep them in veg and at about week 4 or later start looking for preflowers. Cannabis will show its sex even under 24 hrs of light once it has become sexually mature.

Learn to read the plants, if you do what you're suggesting it slows down the process if you put them back into veg after sexing. Most if not all seeds will show sex well before you'd ever have to up-pot from a 1gal pot. Never did get this process of putting them into flowering and then re-vegging again, makes no sense at all. And yes, any stress can hermie them if the genetics suck.
If you're impatient or can't learn to read your plants, cover up any node on a branch with anything (tape works), you'll see flowers (male or female) within a few days and you haven't f'd up the whole plant.

the plants are about a foot or a foot and a half tall and pretty close to 4 weeks old. should i just wait it out for them to show sex? i've actually never seen a plant show sex under a veg light cycle

You're close to when they should start showing, typically around 5-6 weeks from seed. They don't show buds, but they will show small hairs if female, there's a bunch of references with pics on this site and Google to know what to look for.
