Once you see new growth you'll know that they are over what ever transplanting shock they might have gone through. Even if they don't see any transplant shock they'll focus on setting new roots and seeing new vegetative growth is a good sign that they've done that.

Anyways today the plants did a 180 they look amazing, i just need to keep up on watering daily now, they dried out to much i believe.. then shocked from water

I was thinking about that earlier. Using your 70/30 coco/perlite mix, especially in those pots, what probably slowed them down is drying out too much between waterings.
That'll definitely do it. With a bigger garden with more and bigger plants they'll produce enough humidity that it's not an issue but with a small garden in a place where you spend most of your time below freezing outside you'll have that problem.
