Firefox plugins you need to know about.
AdblockPlus http://adblockplus.org/en/
A cookie (the kind you eat not the kind that tracks you) for the person who figures out that AdblockPlus blocks ads on web pages. You subscribe to a list of advertising addresses. AdblockPlus then blocks those requests. You can also add rules to block ads or other unwanted elements that are not part of the list(s) you subscribe to.
Better Privacy http://netticat.ath.cx/BetterPrivacy/BetterPrivacy.htm
Local Shared Objects (aka LSO or flash cookies) are a lesser known threat to user privacy then cookies. They are stored indefinitely and can be used to track your movements on a website. If your computer is sized they can be used to identify what websites you have visited. Better Privacy allows you to easily view and remove these files. It can also clear them when you close or start the browser.
Ghostry http://www.ghostery.com/
Ghostry can detect and block many different attempts to profile your online behavior. From their website "Ghostery sees the invisible web - tags, web bugs, pixels and beacons. Ghostery tracks the trackers and gives you a roll-call of the ad networks, behavioral data providers, web publishers, and other companies interested in your activity."
No Script http://noscript.net/
Basically No Script is one of the best plugins that you can have, and a must for anyone who wants to be safe while browsing. From their website The NoScript Firefox extension provides extra protection for Firefox, Seamonkey and other mozilla-based browsers: this free, open source add-on allows JavaScript, Java and Flash and other plugins to be executed only by trusted web sites of your choice (e.g. your online bank), and provides the most powerful Anti-XSS protection available in a browser.
Beef Taco http://jmhobbs.github.com/beef-taco/
This plugin adds generic cookies that can't be changed to help prevent ad companies from tracking your browsing habits. It won't block ads but it will prevent targeted advertising. Good thing to have.
Form History Control http://www.formhistory.blogspot.com/
Gives you a lot of control over browser history without having to delete the entire history. It can be useful in certain situations where you want casual observers to see the traces you expect to see on a computer but still need to delete, add, or modify entries.
