I mount 20mm stars the same way as COBs, flatten the heatsink surface and the 20mm star to 1000 grit US. Not a single 20mm aluminum star I have ever checked has been flat although some copper ones have been. If you use a really good thermal paste this may not matter but it bothers me so I fix them all.

Attach with Prolimatech PK3 thermal paste or similar(not adhesive), press hard to get rid of air bubbles and get a thin even layer. Secure with kapton tape to stop lateral movement. Solder wires to pads.

Of course you can drill holes and screw them in
