I think a little overkill is fine. You can dim to control temperatures. and get all the power you need.

He will have 3000K and 5000K next week. All these are Vero 29D- Gen 7 so 38.7v

I will stock some more Photon 180V Gen 7 3000K soon. For now just Photon 180V Gen 7 4000K

I have one of these and it rawks.

Just bought some 3000K Vero 29 C's for a new lamp with 4 cobs

Digikey has some options for Vero 29 Gen 7 here
If you cannot solder. Digikey also has pizo-Ezmate connector rated 130V. Good enough for upto 3x Vero 29 Gen 7 38 V version.
