Experienced Edible Mushroom Growers?

I have done some research on growing edible mushrooms, shiitake in particular, and they say that the enriched sawdust block-grown mushrooms don't compare, nutrient wise, in comparison to the log-grown mushrooms, does anybody grow edible mushrooms, and have any validity to this?
Also, has anybody grown oyster mushrooms outside?

Yes I have, and no I have not and I don't know about nutrients, if you have the patience, use the logs, otherwise...

oysters are pretty easy, but I have never done anything outside. My first attempt will be this year with shaggy manes.

They make the best steak gravy. MMMMMMMmmmmm. They grow locally in a couple secret pick spots in my neighborhood.
