i like your brew man, that looks nice. good call on the molasses, i have recently done the same thing (smaller scale) with a different variety of kelp.
the kind you have is Fucus somethingrather and is very common on most rocky shores, i chose to use Bull Kelp stem (stipe), mainly because i saw one on my way across the harbour. a friend, whose cultured abalone, mentioned that i could grind the stipe in a carrot grater to get a small even consistency, he used it to feed baby abalone. so, i got my grater and placed it on an up-side-down 5 gallon bucket, grabbed a foot long piece WASHED of stipe, and grated away! it worked wonderfully. just like carrots, but easier.
in a short while i had about a gallon of grated kelp, which i mixed with a few liters of molasses-y water, and it is brewing as we speak. i try and stir it twice daily.
