I added some herb to my sauce. So good. The earthy/nutty/dark flavors added some low end body to the fruity sauce and really made the catfish pop.

Seriously? Never? What part of the world do you live?
A part that told me catfish were bony and not good eating. On the other side, ive had people tell me its delicious. Guess ill have to give it a try, maybe they were talking about catching and filleting it myself.

Ah. Well I live in the US and here plenty of people don't like fish at all. I've fished all my life and where I live everyone mostly target trout and eat trout. People here claim to love trout, but personally trout is one of my least favorite fish.
Catfish on the other hand mmmm... Especially fried. It's one of the best fish. Also just as someone who fishes and cooks; I'd suggest after you fillet your fish, take your fingers and feel for bones in the fillet. Take some tweezers or pin bone remover if you have it and carefully remove the bones. All fish have bones, and some are worse than others. Catfish are actually less so in my experience.
