I would still give them a other 7 days on water,but there not far of been ready to dry/cure.

Do I harvest even if there are still whits pistils on the tops?

A scope on the trichs is always your best indicator. When you got mostly cloudy with 10% or so an amber color your right in the sweet spot.
Well....thats how I prefer mine anyway.
I learned over time that just eying them up can be very unreliable. I once had a Sativa ( Sugarpunch) that looked like it was all but a dead plant but it took that long to develop. It happens.

Some strains finnish with white hairs. I know Chemdog does.
