The simple fact is that you're losing more of the water to evaporation than the plant is actually using.

Good idea or if reluctant to transplant simply poke some more holes in the present containers and place them on top of a larger container.
Yep, that's another way. New soil in a larger pot and the plants will love you. The roots will eagerly go out the holes for food. No removal from the former pot.

Sink the hard sided plastic pots. Cover any cloth ones with a light colored fabric. Pile as much mulch on as possible. And keep watering.

That's the trade off with fabric pots, they eliminate the circling roots, but dry out fast. I'm fortunate enough to have the room to eliminate them and just plant in the ground. I'm also fortunate enough to have good soil, without amending much, just compost. I do use Sea Grow, though.
