How early is too early?

I've had a crop going for almost 40 days now, I've run into minor issues, but if it gets worse what is the earliest i can chop for harvest while still getting full effects? I know depends on strain and typically how many flowering days. Has anyone cut a harvest really early amd still got good results?

What are the problems? Looks healthy. But your a fair few weeks off
Fungus gnats seemed to pop up the last couple days. Only a couple which i keep killing. Flushed with hydro pero just incase. Bottom leaves tips curling down and turning yellow, slowly going up but only on older larger fan leaves. Smaller leaves are dark green and healthy looking. Did have a musty smell which has not gotten worse and has subsided. I'm on day 38 and it looks good.I'm just afraid if i have root rot and i have to harvest early, or if it's best to let her ride out her last weeks?

Cover the top layer of your soil with some perlite or clay pebbles. Bottom leaves turning yellow sounds like a nitrogen deficiency of sorts.

I would definitely not harvest yet. You will miss out on so much yield and potency wise.

A few gnats are no big deal...sounds like you just let the soil stay too wet for too long. Sprinkle some diatomaceous earth on the top layer of your pots and cover with perlite or mulch. Allow the top layer to dry out; water from the bottom with a tray or something if you can for the next few weeks. 40 days is definitely not long enough & even less than 60 is pushing it.
To answer your original Q IMO the answer is all clear trichomes and mostly all white pistils. You can usually pick some strains at around day 55-57 if the trichs are mostly cloudy and nearly all of the pistils have turned to orange. If pullling on the early side is your aim look for both hardness of the buds to determine done-ness in addition to these attributes. The bud should be of a styrofoam hardness...no give or fluffyness. Squeezing buds is generally not a good idea btw but then again so is picking early.
The plants in the pics are nowhere near being finished...you've got another month to go at minimum.
