Just finished a good batch of gorilla glue. Nice buzz when I smoke but my taste is a little off. What am I'm doing wrong?

One of the most important things for good flavor is a nice SLOW dry. 10-14 days hang drying is a great start.

and another is

Really waiting till the plant is finished and not harvesting early is vital to getting the best taste. Do you have any preharvest pictures? One of the biggest mistakes new growers make is harvesting early. It will negatively effect flavor, smell, yield, and overall quality.

I do hang them and try and keep temp and humidity at 60/60 for about 7 to 10 days

Give me your run down on harvest time and curing
Nothing fancy.

Wait until the buds are plump and mature before harvested. (If you have to question whether it's ripe or not, it isn't ripe yet)

Whole plant hang, or very large pieces. Dry trim. Store. (dry it nice and slow, in the dark)

Plenty of info in the harvesting and curing section regarding trichomes, burping etc.

Just harvest it ripe, and dry it nice and slow.

After the hang dry how moist are they still? If there is any moisture left, don't put them in jars and mess with them. Put them in a paper bag for another 3-5 days and let them finish drying, and stir them every day a little. Then trim the buds up and they should be delicious and ready to smoke.

You may have just harvested to early, that really is a huge factor and is easy for people to mess up. It is REALLY EASY to harvest too early, it is REALLY HARD to harvest to late. I've never seen someone accidently over ripen a plant in the last 13 years I've been growing and on forums online.
