yes, in theory it's distilled water but I would not use it as your AC unit is not necessarily sterile, thus you could have bacteria, mold or other undesirable elements
I don't know what you mean by "evaporator", but the water that is produced by an air conditioner is just atmospheric moisture that freezes to the coldest surfaces; and in turn melts back into "water". It's not distilled, it has whatever crap the ambient air was expossed to,still floating in it!
