We had a bumper crop this year and did everything with it. I grew 6 plants we must have gotten 50 from them at least and there are still more ripening. It's harder to give away than some vegetables too! The ones in the basket are overgrown and seedy. We just can't keep up. They're lots of fun to grow but just 3 next year!

We made moussaka, we made eggplant parm, we made dry fried Sichuan style eggplant with pork, we made Baingan Bharta, we made a great dip like babaganoush, we could pickle some for winter but, ew, no thank you! I may still tempura some late season babies. I just oven roasted some super ripe cherry toms, another crop overperforming this year. They'll get frozen along with the rest for future reference.

My problem is I don't have a legume allergies either. So I probably would not stop eating that! It looked so good. The only thing worse would be your take on that! I imagine trading my first born child for one! Ok maybe not a downside...... hmmm. You gonna make us a p-nut butter pie?
