New setup looking for opinions! ebb and flow or top drip at this point

hey guys
just finished my first run with a fairly simple ebb and flow setup now looking to upgrade

i plan on getting a 1050mmx1050mmx150mm flood table, just wondering how high i should flood too, and should i just go with 150x150mm rockwool blocks
or use pot plants, where im a lil confused is if i do put them in pot plants for the extra root space, say 300mm, how is the plant going to get water especially
when its just out of the cloning tent?

any thoughts would be much appreciated
