to get rid of the bubbles when you are done (purging in a vacuum under heat)... put the finished patty on the heat surface (griddle in my case, or in the chamber, not under pressure) and let the oil get to no more than 125. The bubbles will smooth out and it will be a smooth surface. Give it about 10 min or so. I just got done doing the same...
Boiling
After it's done, mine looks similar to yours, although I think yours needs to be purged more by raising the heat, you need a laser to measure precisely...I put mine on the griddle surface and use the laser to keep it at 125, take it off as necessary. All the waves and pits will fill into a nice smooth surface
At this point, it's 'curing' and is stuck to the parchment. When done, at least 30 min after removing from heat.. (I leave mine overnight) take it to a hard edge, like a table, let the patty sit flat and take it to the edge of the table and pull the parchment down, and rotate it until the entire patty comes loose. the patty will kind of float until it's no longer stuck to the parchment.
