Pruning for shape/ height

several of my plants got way too tall last year, 6-7' so instead of waiting for them to get tall, then cutting them down a foot or so i am trimming when they are very small. first is a white widow. when the plant started to send out a single set of leaves between the two triple leaves, i cut the middle one and got two. did this four times now with the new middle leaves. instead of a 3' high spindly plant it is about the size of a basketball. the main stalk is about 3/4" thick, then the first "Y" is about 1/4" and those are divided four times, then i let it go. now the plant is very bushy and isn't getting much taller at about 11" high, 14" wide growing out. i'm wondering if there are any other methods in trimming someone could tell me about? tia, j
