Hello!
I've got an 80x80x180cm flower tent, and will be replacing my four big 21L pots with nine smaller 6L fabric pots.
What diary keeping tips and tricks can you share to help get me 'dialed in' with a steady flow, keeping track of my plants?

So far I make note of waterings, ferts, cuttings, transplants, transfers to 12/12 room, things of interest, and... what week each is up to; how many weeks of 12/12. My system for writing that, at the beginning of each week, isn't very efficient and may get messy with nine plants going.
I label each clone with a sticker on the pot.

In my veg closet I have one big scrog mother (VIP Amnesia) 50% of the closet, and then 50% room for rooting 12 cuts in a seedling tray, and cramming in nine in 1L pots for vegging... to a small size.

I'm a little concerned that I have no plan for giving them time to root when moving from 1L to 6L pots - they would probably have to go straight to 12/12.

That's a bit cramped of a log for my tastes. Do whatever gets you the information you need, honestly.

To make things simpler if you haven't done this already you may want to consider a spreadsheet or calendar with a schedule that includes when to water, feed, your groups of plants.

I'm just starting out too. I'm tracking each plant's progress individually - height/width is one thing i'm tracking, and I leave little notes for myself about if there's anything special or odd about the plant as it grows (like "ripped the roots while transplanting" or "best grower"). Basically the only thing I'm really doing different is keeping detailed logs about the stats of each plant, so I can see which are the best ones to clone from. It also allows me to see trends - plants that grow particularly slow compared to others might be culled sooner because they can't keep up, you know?
