I'd say keep it going if you think it can handle it (I know little about turntables). Just watch the plant and see if it's wobbling too much as it grows. This is definitely something you'll have to play by ear. This is definitely an interesting project.

did you try an A/B thing?..... I was thinking about doing this as well but with one variable speed motor attached to several discs by means of a belt of some sort... just curious before I try it out and find it didnt work or hopefully it did
