I have 1 plant that has gotten pretty big, I was just letting it be but I think its at the stage where it needs actual attention

The plant: Sour Diesel, 6' 2", mild about of bushy ness, 2 white hairs are showing about 4 months old

How much water does it need?
How often should I give it nutrient?
When does it become the middle part of bloom?
Should it be trimmed? How far down? Do I just let it ride
How do I know when its done?

I water my plants whenever the top inch or two of the soil becomes dry, which is about every two days during the summer. How much you water may be different depending on the soil or type of planter you have.

Nutrients should be provided every few weeks, or whenever symptoms of a deficiency appear. I fertilize once no less than three weeks apart. Consider fertilizer optional as long as you have plenty of high quality soil in a large container.

The time of flowering is usually late in the year for sativa dominant hybrids. I'd expect it sometime in September.

Trimming cannabis is optional. Everyone has their special thing that they do, but you aren't going to go wrong with letting it grow naturally.

The flowers are "done" depending on your preference of effects. Most people take them when the trichomes are cloudy white, or you could wait until they turn amber from THC becoming CBN. However, the rule of thumb is that you should wait a week from the day that you think it's ready. Don't be concerned if some parts mature faster than others, as you can harvest the mature flowers and leave the others to mature on the plant to be harvested later.

Mine are in dirt with some citrus miracle grow soil

Citrus Miracle Gro potting soil isn't really ideal, but it works. It has excellent drainage, which is nice. I used it once, and my biggest problem was a nitrogen deficiency from the slow-release fertilizer.

Don't fertilize the plant, but get some nitrogen fixing bacteria to help any nitrogen deficient chlorosis. I like to use Xtreme Gardening Azos, and that product can be ordered on Amazon.
