starting my first fpe/ffe any advice

about to start a fermented fruit extract/fermented plant extract i believe its called. i will be following hyroots method in post #4 in this thread Organic no till, probiotic, knf, jadam, vermicomposting, soil mixes, sips etc... Q & A | Rollitup and thought i would post my planned procedure before i start to see if i have the right idea and to make sure i dont screw this up. im looking for any feedback or advice thanks in advance.

i will start by cutting the fruit (banannas, papaya, mangos, and golden dew melon) peel and all into aprox ~ 2" pieces
after all fruit is sliced add to bucket until 1/3rd capacity is reached
add 1 pint activated labs
fill the remainder with RO water
ferment 3 weeks
stir and wait 1 more week
remove 1 pint solution and add back 1 pint RO water and use a tbsp per gal

so far i only have 2 questions
will the mangos be ok in this recipe or are they too acidic? i could replace them with watermelon if so.
and lastly after adding the pint of water back to the ferment during week 4 how long until another pint of solution is ready?

lmao yea exactly what me and the wife said when we were shopping for all this fruit not to mention all the fermenting/brewing info and equipment i have come across while learning about organics. i mean honestly with beer brewing kits and nice grain kits for distilling it couldnt get much easier it seems maybe a new hobby if i ever get the time haha
