Vacation watering- will this work?

you would need a water pump as well as a timer.
When I went away for nine days, I set my grow bags in drainage dishes and fillled up the overflow dish with a couple gallons of water and the soil just wicks up what it needs. Normally I water every 5 days, my plants held up fine for nine.
Hold on, are you inside or out?

Inside. So I could possibly just get away with getting an overflow tray?

Yes, as long as you get an overflow tray that's large enough and make sure to have a fan on your plant at all times to avoid bud rot. It worked for me, but you know how much your plants drink. Most often the simplest solution is the best. I considered setting up something like you were, but if something failed my plants would have died. Letting the soil wick up the water as needed is foolproof really. I found some large drainage dishes at homedepot that can hold 2 gallons of water and they have other ones that can hold a bit more than 3 gallons as well.

Thanks, I didn't know that plants would absorb water from the bottom up. Yay, now I can spend the money on odor control.

No problem, think of the soil as a sponge, if a bit of the sponge is touching some water it will suck it up. Just make sure you water the soil thoroughly before putting water in the overflow tray or else your plant will suck up all the water and could dry out too much before you get back.
