What physical and chemical changes occur within the product to make it better after a cure?
In my 9 years experience, I know product that is dried in a hurry has a tendency to be harsh. I know that product that is a touch too wet doesn't smoke that well and the affect follows suit. I've heard claims that slow drying and curing makes for a more potent and tastier product. While I can understand the taste claim, I'm skeptical about the potency.
It seems like once the product is dry, how can it get better? The only way potency can increase is to have the chemical properties of the product change. I'm wondering what those changes are and what causes them.
In my actual experience, product that is dry, whether it took 2 months or 2 weeks, doesn't seem to be any different from one another.
