me too, for my sins..
What did I do to deserve this line of work??? lol Iknow what you mean sometimes....
On the other hand, when I work in another industy for a while to get away from the kitchen I always find myself missing the controlled chaos of the kitchen. There's nothing like getting slammed and the tickets are coming out faster than you can hang them up----AND ALL YOUR PREP IS DONE. Ahhhhhhh
If my station is preped right, I can work 8 hours non-stop. As soon as something important runs out, bad things start happening...

I love it really. Sometimes I hit a Zen-like moment where my senses are so heightened that it seems like I'm moving in slow motion and everyone else is speeding by in a blur. Movements become fluid and even though it seems out of control, everything is fine........as long as the prep is done....

I try as much as possible not to delude myself  I'm no chef...lol Lately though, since I've been making more pot laced goodies, it has me baking more than I have before, and I think I really like it. I'm starting to think about going to become a Patisserie (Pastry Chef).
So you're a Garde Manger? Do you at least have a job that lets you express yourself, or is it all stamped out the way the corporate guy who's never cooked a meal in his/her life wants it?

lol thanks, It does come in handy.
I do a lot of baking at work, pastries, mince pies galore right now, macaroons, nothing too fancy due to the type of shop it is. I'm no chef either, i can cook up a storm but i'm not one for inspiration. While i have free reign to cook up whatever i like at work, i have a set "menu" so to speak that has to be ground out each day, pretty boring job, but i do like having a bit of fun with soups and quiches :)

I took the job knowing full well i would not really enjoy it, but specifically asked for the job because seems most folk have forgotten how handy knowledge of cooking can be in life. I like that if someone comes over, i can cook up any kind of meal, as opposed to being the bloke with the one horse show, that one meal they can cook get's old to folk fast :D

Haha, i'd never agree to work in that kind of environment. I work the kitchen alone, while timings have to be near perect, this is purely due to oven space, but most of the time i can just danec around with my headphones on and enjoy my day :D Not every cook who can sit down for 10 minutes while he waits for some hard boiled eggs to cook :D

Got the first coat on. Smoke break. Good answers everybody. I work for a swimming pool company from Mar-Nov then go on unemployment Dec-Feb. Been doing that about 10 years now. It sucks but the pay combined with the UC is unbeatable. I also pick up sidejobs here and there.

Songwriter by trade. Does not pay the bills, though. Not yet anyway.

Basically unemployed while I train more musically. It's a choice, and I don't collect.

Working the grill sucks worse when you have a salamander over it. Talk about sweat...
