If you chop too early will your bud smell like grass when dried because I think I did they was about 50/50 cloudy and white maybe more cloudy hard to tell with my microscope and about 60% of pistils was orange and receding

the grassy smell comes from drying too fast

And not curing it properly, it will smell like that for the first few days of curing, then transition into whatever smell the strain has. That's what burping/curing does, allows it to dry properly and removes those smells/tastes of grass/hay. The trichs or early/late harvest have nothing to do with that smell.

We'll I have only just started drying like 2 days ago humidity is about 55 and temp about 70 they smell a bit like grass but I was thinking that would go when dry but I just read that if you chop early it will still smell like that when dry

Yeah it will, just cure it for at least a couple of weeks, it'll smell and taste completely different.
