We went to Costa Rica some years back and I was floored to see eggs for sale in a market just sitting on a shelf.
All my life I thought they had to be stored refrigerated - not so, apparently that's a first world thing.

If they get washed they have to be refrigerated. It washes the bloom off. It's a protective layer so the egg doesn't go bad till it hatches. Eggs are porous. When you hard boil an egg the older it is the more of an air bubble you'll find in the egg after its peeled.

First world doesn't like to see poopy eggs....

Fresh eggs can be put in a jar of water with a tbsp.of pickling lime.They will keep at room temp for over a year and be cooked as normal.smh
