What you are doing is drying out the bud from the inside out. Once the bud drys completely the trichs are dry too, which means they are now active.
Smells get stronger and all those trichs now become active. Way better smoke, smoother, tastier, stonier.

The moisture in the buds escape as they dry, but putting it in a jar contains the moisture. By jarring them, and opening the jar 2-4 times a day moisture will be allowed to leave the buds more slowly, and buds will dry more evenly, not just the outer layer. This will result in a smoother smoke and stronger weed.
