Mold build up? How many days

The longer it goes on, the more likely it is to occur, but the same is true for any high humidity environment. A significant amount of rain will raise the RH for several days, or more, so the problem will persist past the point it stops raining. This is where strain selection and preventive measures become so important for outdoor grows. Biological fungicides, such as Regalia (expensive, but works) or Southern Ag Garden Friendly Fungicide (bacterial based, cheap, also works) are a good 1st line of defense. Foliar treatments with chitosan and/or aspirin water (1 aspirin per gal) also can help. Strains that form very dense, thick colas are more likely to get botrytis than airy sativa type buds.

Keeping the plant at peak health really helps to ward off mold and bugs. Shake the water off when it's done raining and keep that airflow active one way or another. I always tell people don't count on outdoor weed. There's alot of factors that you can't control.
