I used to vacuum pack too but it seems more wasteful with the thicker plastic and the seal sometimes fails anyway. I like adding the zip lock too. Keeps things more identifiable.
I always double sometimes triple seal the ends when I vacuum pack anything that's not dry and can affect the sealing with moisture. The wrap makes it easy and fast. Plus I buy big rolls of 18" wide so there is plenty to work with. I'm lucky to have a Chef's Store just a few blocks away. It's basically a restaurant supply store.



They have lots of meat.

Absolute hilarious story about that…

So like 20 years ago I'm working with my mentor as his helper. I'm like 16? And he's in his mid 40's. Our days back then consisted of smoking joints and fucking off. We stopped at a gas station for lunch and he downed like 3 packets of those emergen-cs for some reason. So we go and do a vacation check on an empty house thats on the market. Suddenly his stomach became violently upset. So he tells me he has to run in the woods. To do so involves scaling down this huge hill behind the pool. He gets about a quarter of the way down and slips and I just here "oh no" and he's tumbling down this hill high as hell shitting his pants just saying "oh no" repeatedly. It was perhaps the funniest thing I've ever witnessed. He ended up leaving me there and driving to his moms house and changing into some of his brothers clothes. We still bring up that story every season lol.

I've missed your colorful, word pictures, EPIC!! In the ER we heard the stories but seeing them happen is priceless.
