I would leave them, they will do fine and in a matter of a few weeks you will be transplanting them, and if thats the container you plan on useing throughout grow wait until they get a few weeks old and strong.

You really can't measure how much water. If its dry the roots will dry out, if uts soaked and not able to drain out excess the stem will rot. I go through clones sometimes from over watering the rockwool, I finally got a humid dome to solve that.

Fim means to take off 2/3 of a new bud site in flowering. It can also be done in veg to make one branch create 2 like a V.
