Glazed Mini Brownie Bites w/ cannaButter

Hello, this is my first time posting in the cooking forums here, but I hope it will not be my last. I've been baking brownies for some time now with canna oil, until I learned I could substitute butter. I now make butter in a crock pot, usually 2 pounds at a time. I'm not going to cover a recipe here for the butter, as that is in several posts here on RIU. I am open for suggestions on getting rid of that weed taste in my baked goods. I suspect it's chlorophyll and I'm getting it because I'm not using cured bud or leaf, I'm using fresh dried trimmings that are still nice and green. It has been suggested to me to water cure the material instead of air drying it, to possibly remove the undesired taste. I may try that...

While browsing eBay, I ran across a Wilton Brownie Bite silicon mold. It can also be used for candies. Being an avid pot brownie fan, I immediately purchased a mold for $9.99. Long story short, second mold shipped out today. :clap: LOL A box of 8x8 brownie mix will make about 45 brownie bites as I found out, but the mold only holds 24.

The first step was to preheat oven to 340 degrees. I do not like to get too close to 350, as I don't to mess up the psychoactive THC that was activated cooking the butter. This may not matter, and feedback and comments on this either way, is welcome, please. I spray the mold with a silicone cooking spray to avoid long clean ups and so I can get them out easy enough.

Following directions on the box, my only switch is to add 1/4 of coffee instead of water as listed on the box. I like the java flavor and use an instant and make it strong. About a full tsp of instant in a 1/4 cup of hot water. I use Duncan Hines mix, as it calls for 3/4 of a cup of oil, the most of all in store brownie mixes. I usually add a little extra cannabutter in place of oil and top of one cup mark with coffee.

You can see I added some pecans to some of these. The goal was to make some different varieties for decorating ideas. I use walnuts as well. Before trying to remove the brownie bites from the mold, they need to sit on a rack like the one pictured for at least 30 minutes minimum. When I am ready to release the mold, I cover it with wax paper and flip the mold upside down. With practice, it is quite easy, a simple one fluid motion twist of the wrists, while keeping tension on the wax paper. I place the wax paper with bites on a large cutting board and refrigerate, again, for at least 30 minutes to harden a bit. I don't want to handle soft brownies while glazing and decorating.





The brownies were decorated using store bought glazes. Duncan Hines makes two new glazes, chocolate and vanilla. they microwave for 30 seconds, then pour. I found them on sale 2 for $5 and i had $1 off coupons that I printed from the Duncan Hines website. At only $1.50 each, it was cheaper than buying ingredients to make my own glazes. the designs represented above required no thought or inspiration. I just did them on the spur of the moment, trying to mix the two up. I really love the way the nougat looking brownies came out. Here is a close up...





Yum.... The glaze and coffee do a great job masking the chlorophyll like taste, but those familiar with it, would still be able to taste it, more than likely if they burped after eating one. If I can lick that problem, the bakery is the limit. Right now i avoid sugar cookies or cakes, because of the flavor issue. Chocolate seems to mask it the best.

I just got a gallon of Glycerin in, so I may just mix up some tincture and find a way to substitute that into a recipe as part of the sugar requirement. I imagine it would act like a preservative and add some moisture to baked goods.

The purpose of writing this was not so much a guide as it was to simply share a passion of mine, cooking. I hope it opens up discussions into making treats and maybe explore some new ideas. I know someone will ask this, so I'll answer it now... I can eat about 5-6 brownie bites. I limit myself to that at one time and I feel great about 2 hours after enjoying them. It creates a euphoria, a feeling of warmth and general goodness throughout the body. I use cannabis to avoid anxiety attacks. It has replaced a dangerous anti-psychotic I was prescribed that caused chemical imbalances. I am a strong believer in medical marijuana.

Any particular strain(s) that you favor for anti-anxiety effects specifically?

I have a feeling it will too. I have water cured before and i know how effective it is at cleaning up a bud. Take a look at the buds below. The one on the left is a water cured bud of Bubblelicious. On the right, is an air dried bud from the same plant. Which one do you prefer? :)

These look great, Have you tried to do a full glaze or en-robing them? Just wondering because ever since those Betty crocker brownie bites things I have been interested in trying it.

I'm going to do a dip next time, so the entire top will be coated. A candy glaze will be needed for that, or maybe an ice cream topping that hardens? I'd like to play with several design ideas... I forgot to put the powder sugar on the plain ones on left before taking the pic.. :) I was going to lightly dust with powder sugar and place a quarter maraschino cherry on top.

Since this is a general discussion can I ask how you've been making your cannaoil? Ive tried budder once before and it didn't work. I've got a crockpot full of ground trim and stems I've been sitting on for about a month. I still have never had a decent edible. Feels bad man :sad:

I was making canna oil on the stove top, electric stove.... I'd just toss in clippings, pour in 4 cups of oil, and simmer all day long. Now, I just put butter in croc, add clippings and some water and leave it on low, overnight. If I can, I go for a day.

A bit late, but I suggest you try espresso instead of coffee. My girlfriend adds the espresso, in powder form (the kind you would add to an espresso machine), directly into the mix. I find it has a much bolder taste of java! ;)

last baking i did was banana muffins, those come out very yummy as well.

Thanks for that tip. Espresso is made from powdered coffee beans. Is that what she is adding? or an Espresso mix from International Coffee?

Thanks! These are very easy to make and the decorating, as you can see, is very basic. These also work out well with plain butter for holiday events.

Have you ever had the chocolate covered coffee beans??? What if you made the chocolate with your cannabutter??? Hell idk, just thinking out loud again.
