Tonight is bean burritos with red chili. Dessert will be melon balls (casaba, honeydew, cantaloupe, watermelon) that have been chilling since yesterday. The melons help cool the effect of the red chili. The beverage will be chilled Horchata.

Homemade soft shell tacos with salsa and strawberry shortcake for dessert with fresh whipped cream. I get my milk/cream/butter from a local dairy at the Colorado/New Mexico state line. The Rothlisbergers have owned that dairy for generations. Best damn milk in the world. I picked the strawberries out of our patch (delicious). Some of my relatives were evacuated today due to fires so we're putting them up for the night. Hopefully things will look better in the morning. The smoke is terrible.

The sides were refritos and spanish rice.

Salsa Recipe:

1 28 oz can of whole stewed tomatoes
2 cloves garlic
1/2 large onion cubed
1 - 2 TBS chili pequin (if you can't handle spicy then stick with 1 TBS)
1 tsp. salt
1-2 TBS cilantro (depending on your taste)
1 tsp of finely minced cilantro for garnish (set aside - do not blend with rest of ingredients).

Add all ingredients (except for cilantro garnish) to blender and liquify that shit. Top with cilantro garnish and set in fridge to chill.

The beverage was virgin Sangria. These yahoos are all Mormon. I have to be on my best behavior. :p

2 steamed artichokes and portabella caps stuffed with panko, sauteed chopped mushrooms, garlic, chili flakes, and a touch of gruyere. Maybe some oriental style top ramen, now that beardo mentioned it. Tis a guilty pleasure of mine, cooked with less water to make the noodles soak most of it up, garnished with a little sesame oil, scallions, and sriracha
